Welcome to the first of my monthly recipes and tips. Today is Pancake Day and who doesn’t love a pancake! As you probably know I tend to avoid wheat as much as possible in my diet and so days like today can be slightly more tricky (but not impossible!) so I thought I would share with you one of my go to recipes for pancakes and a real favourite of mine at the moment!
2tbsp Coconut Milk
1tbsp Coconut Oil
Mash the banana with a fork.
Add the egg and mix together.
Add the coconut milk and mix, making sure the lumps of banana are reasonably small.
Heat up the coconut oil and fry the mixture until cooked on both sides.
Serve with lemon juice or just on its own! Scrumptious!
