Breakfast Omelette

As you probably know I try to stick to a Paleo diet which means I normally avoid grains (wheat etc), diary and legumes (lentils, pulses etc) as I feel really good eating this way and many of the aches and pains I had previously just don’t exist for me anymore. The one question I get asked more than anything else other than “what do you actually eat?!” is “what on earth do you eat for breakfast?”. I know this is a tough one to get your head around initially but once you do it is really pretty easy! When I was commuting the below recipe was great for boxing up and taking to work and meant I could prepare it the night before:

Breakfast Omelette
(Serves 1)

2x Organic Free Range Eggs, Whisked
1x Medium Onion, Chopped
1x Tbsp Butter

Fry the onions in the butter until soft and then pour the eggs over the top. Cook until the eggs stopped wobbling, I normally finish under the grill just to be sure! Allow to cool and then chill overnight.

Serve with chopped veggies (carrot, pepper, tomatoes) for the perfect on the go breakfast!
